Cabernet Sauvignon Mendocino County 2006
An atypical California Cabernet, perfectly balanced and easy to enjoy. Upon opening there is a slight perfume to this garnet colored wine that is crystal clear and translucent-a flawless appearance. After a gentle swirl, the true aromas come through; violet, fennel, cherry blossoms, bell pepper and slight menthol followed by blackberry and blueberry as well as a bit of black pepper on the finish. On the palate, the round tannins and moderate intensity give way to a graceful and enjoyable mouth feel. Connoisseurs of fine wines will find this an alluring, complex wine.

The 2004 reflects our movement in employing a balanced wine, new oak, but the flavor profile is classic Rosati: deep red color, with aromas of dark fruit, especially boysenberry and blackberry; licorice, bay leaf and mint on the finish. Good acid and dusty tannins in the mouth.

Zelma Long: “This is a red/black fruit driven wine of medium weight and length with integrated oak.It is pretty, gentle and easy to drink: a “sweet fruit” wine. With time in the glass, the wine develops more complexity. The 2003 Rosati Cabernet Sauvignon is appropriate for a wide range of foods or by the glass.”
